Understanding the Role of Dietary Counseling in Teaching Nutrition Education
Mention taking a 24-Hour food recall and most Extension educators cringe! Probing clients about what they’ve eaten, coding food items, and entering such data in a computer system for analysis can often turn into a big job! However, the end result can be beneficial. A thorough review and discussion of the “ABCs of Dietary Counseling” can aid in eliciting accurate responses, setting goals, and positively impacting behavioral change among limited-resource families. Research has shown that positive dietary counseling will impact desired nutritional behavior.
This session will briefly discuss the “ABCs of Dietary Counseling” and its usefulness as a teaching tool for educators as they seek ways to motivate clients to improve their dietary practices. Conference participants will understand the importance of gathering sound data for 24-Hour food recalls, name strategies and tips for effective dietary counseling, and realize the importance of putting into practice the dietary counseling tips discussed. This session will also explore the implications and unique opportunity of collaborating with volunteers and agency personnel who also offer dietary counseling. Conference participants will have the opportunity to discuss their own successes and dietary counseling experiences with limited-resource clients as well.

Jovita is a 1988 graduate of the University of Alabama in Tuscaloosa, Alabama where she earned a Bachelor of Science Degree in Home Economics Education and a 2002 graduate of the University of West Alabama in Livingston, Alabama where she earned a Master of Education Administration.
Previously, Jovita taught Home Economics at Hayneville Middle School for the Lowndes County Board of Education (1988-1989), provided leadership for the Chilton County 4-H Club program (1989-1992), provided leadership for Hale County's 4-H Club program (1992-1995) and has served the Expanded Food and Nutrition Education Program in several capacities since 1995.
Jovita is currently a member of the Alabama Cooperative Extension Service Employees Organization, the Extension Specialist Association, the National Extension Association for Family and Consumer Sciences, and the Sarah Christian Civic Club.

Kimberly is a 1993 graduate of the University of North Alabama in Florence, Alabama where she earned a Bachelor of Science Degree in Human Environmental Sciences and is a 2000 graduate of the University of Montevallo in Montevallo, Alabama where she earned a Master of Arts in Teaching.
Previously, Kimberly provided leadership for the Greene County Family and Consumer Sciences Program and EFNEP (1994-1997), provided leadership for The Tuscaloosa County EFNEP Program (1997-1999) and has served EFNEP as Multi-County Agent and Specialist since 1999.
Kimberly is currently a member of the Alabama Cooperative Extension Service Employees Organization, the Extension Specialist Association, and the National Extension Association for Family and Consumer Sciences.
